Discard the hard outer leaves of the cabbage. Wash the tender leaves and the core, discard the large ribs. Squeeze the leaves dry and shred finely. Dice the ham. Coarsely grate the cheese. Put these ingredients into a salad bowl. Make the dressing: Combine the cream and mustard. Pour the oil little by little, beating constantly, add the vinegar slowly, salt and pepper. Pour the dressing into the salad bowl, chill for 1/2 hour allowing the cabbage to marinate in the dressing.
